- 2 lbs chicken pieces (legs, thighs, wings, breasts)

1. In a large bowl, combine flour, paprika, garlic salt, onion salt, salt, black pepper, cayenne pepper, celery salt, sage, cumin, and coriander.
2. Pour buttermilk into a separate large bowl.
3. Dip chicken pieces into buttermilk, coating completely.
4. Roll chicken pieces in flour mixture, shaking off excess.
5. Dip floured chicken in buttermilk again.
6. Roll chicken in flour mixture again, pressing coating onto chicken.
7. Heat vegetable oil in a deep frying pan or pressure fryer to 350°F.
8. Fry chicken 8-10 minutes or until golden brown.
9. Drain on paper towels.
